Made with Star’Bake Rustic, this recipe creates soft, flavorful loaves and rolls sure to please any blueberry lover. Honey and DDA Blueberry Bits by Dawn Foods add a sweetness to wholesome oat and stone ground wheat flours.
Prep Time: 18+ hours
Bake Time: 15 - 25 minutes
Instructions
Combine dry ingredients in a spiral mixer and blend at a low speed for 1 minute. Add honey, water and unsalted butter. Continue to mix for 4 minutes on your mixer’s first speed and then for an additional 5 minutes on your mixer’s second speed, or until dough is fully developed. Incorporate the blueberry bits at a low speed. Maintain dough temperature at 78°F (26°C).
Once the dough is fully developed, allow it to rest for 60 minutes, folding after the first 30 minutes. Next, portion and shape dough into rustic rolls or loaves, and then place formed loaves or rolls into a cooler for up to 16 hours.
Next, remove from cooler and proof for up to 60 minutes at room temperature in a covered rack.
Bake bread at 428°F (220°C) in a deck, rack or revolving oven, with steam (if desired). Bake small rolls for 15 to 18 minutes and artisan-style loaves for 20 minutes. Times and temperature may vary depending on the oven. Once the bread has turned golden brown, remove from oven and let cool.

Ingredients
The chewy, tender texture of a bagel meets tart cherries and sweet chocolate in this delightful artisan bagel recipe. Made with Lesaffre's Star'Bake Rustic, this formula contains just six simple ingredients to simplify the baking process.

Bake Time: 15 - 18 minutes
Instructions
Blend all dry ingredients for 1 minute in a mixer at a slow speed. Continue mixing for 4 minutes on your mixer’s first speed and then for an additional 5 to 6 minutes on your mixer’s second speed, or until the dough is 95% developed. Next, add dried cherries and chocolate chips and blend on low until combined. Maintain the dough temperature at 80°F (27°C).
Once the dough is fully developed, divide dough into 4.2 oz (120 g) portions and form dough into the desired shape. Traditional bagel rings, bagel sticks, or bite-sized portions are recommended. Once the dough has been formed, retard bagels for a minimum of 4 hours in a cooler.
Next, place bagels into boiling water, containing honey, for several minutes or until the bagels begin to float to the surface. Option: top each bagel with cinnamon sugar.
Bake at 428°F (220°C) in a wood·fired, rack, deck or revolving oven. Bake for 15 to 18 minutes, let cool and enjoy.

Made with Star’Bake Rustic, these crusty and fragrant rolls will be a hit at any barbecue or tailgate party served with hamburgers, bratwurst or sausages. The subtle roasted onion flavor is complimented by smoky pepper and bright lemon flavor.

Bake Time: 18 minutes
Instructions
Combine dry ingredients in a spiral mixer and blend at a low speed for 1 minute. Add water and unsalted butter. Continue to mix for 4 minutes on your mixer’s first speed and then for an additional 6 minutes on your mixer’s second speed, or until dough is fully developed. Maintain dough temperature at 78°F (26°C).
Once the dough is fully developed, allow it to rest, covered, for 10 minutes. Next portion dough into 2.8 oz (80 g) portions and shape into rounds for buns or ovals for sausage rolls. Allow dough portions to proof for 5 – 6 minutes.
Next, score each roll or bun once lengthwise and top with a generous sprinkle of lemon pepper seasoning. Bake at 425°F (220°C) in a deck oven (with steam, if available, for 5 seconds) for approximately 18 minutes, or until rolls have a warm golden brown color. Remove from oven, let cool.

Ingredients
These flavorful bite-sized rolls, made with Star’Bake Rustic, are a perfect breakfast accompaniment, snack or dessert. Filled with aromatic bits of pineapple and mango, and garnished with either cinnamon sugar or sweet icing and toasted coconut, these soft rolls taste like the tropics.
Prep Time: 1 hour
Bake Time: 15 - 18 minutes
Instructions
Blend flour, Star’Bake Rustic, and sugar for 1 minute on your mixer’s first speed. Next, add water and unsalted butter. Continue mixing for 4 minutes of your mixer’s first speed and then for an additional 6 minutes on your mixer’s second speed, or until the dough is 95% developed. Now, incorporate dried mango, pineapple pieces, and shredded coconut and blend on low until combined. Maintain dough temperature at 78°F (25.5°C).
Once the dough is fully developed, do not allow it to rest. Immediately form dough into long ropes, about 1 in thick, and cut into 1 in (2.5 cm) pieces. Allow portioned dough pieces to proof for about 30 minutes.
Next, bake at 425°F (220°C) in a rack, deck or revolving oven, with steam. Bake for 15 to 18 minutes, or until golden brown. Remove from oven, let cool. Once cool, apply white icing and sprinkle with toasted coconut or brush with melted butter and roll in cinnamon sugar.
